Delicate. Caracol is the selection of the separate single bean with maniacal precision. A "defect of nature" makes its taste rare. The aroma is decisive and pleasantly bitter.The coffee fruit seems like a cherry, called "drupa", green at birth and red in maturity. Normally each berry has a kernel of split in two, covered with a thin film called pergamin. However some of these kernels, are special: instead of being divided into two grains, they are formed from a single sphere. Then the name of "Pearl" or "Caracol".But why is it considered so precious? The Pearl coffee is a bit like the Picolit in the wine world: both arise from a floral abortion, a defect of nature which becomes rarity. The spherical shape of the grain Caracolito allows a more even roasting, and it gives a fresher flavor, a strong acidity and a more intense and elegant aroma. Minimum quantities introduced in the market make this coffee valued.
